The Hakka people are an important part of the Chinese diaspora.  As they have settled throughout the world, their food varies greatly depending on what ingredients are available in that region.  For they most part, they seem to like slow braising, and focus on bringing out the natural taste of the ingredients.  This lesson only covers Hakka foods of Taiwan; so if you’re in China, Hong Kong, India, or elsewhere, and you see a Hakka restaurant, don’t expect it to be the same!
