Beef Noodle Soup
Said to be the national dish of Taiwan, (though behind 魯肉飯 in my opinion!) Beef Noodle Soup is a simple, yet extremely filling dish that can be made a number of ways. The noodles can be thick, thin, or even just wads of dough that were hacked off of an even larger wad of dough. The broth can be salty, spicy, or clear; and the portions usually range from big, to large, to huge.
The most famous Beef Noodle shops (that is, the ones which cater heavily to tourists) can be a little pricey by local standards, but if you end up spending a long time in Taiwan, you can always experiment with lesser-known spots until you find a hidden gem. There is no consensus though ~~ everyone seems to have their own opinion about whose Beef Noodles are the best!
